How cold is your winter?
Mine is typically 4°C-12°C, so while I have a winter kit for those occasional subzero (°C) days, most of my castelli winter gear is regular kit with an extra layer.

I can only tell you something about the garmin-cervelo 2011 thermal bibtights. The fabric is very comfy and keeps you very warm. Knee sections is double layered (inside) for extra protection. The Kiss3 chamois is very good and comes very close to the top of the line Progetto which I have in some of my summer bibs. I've already worn it at about 5°C and it's absolutely not to cold. You may wear it in even colder conditions - a lot depends on your personal preferences. ;-) If you are looking for tights for hardcore winter rides (below 0°C) you may opt for a model with WS-membrane and/or warmer/thicker fabric. As far as I can see from the castelli website, the Sorpasso seems to be a bit warmer, more high end technology and I guess also more expensive.
